Dinner- February 17, 2020 . I really just wanted really horrible quality comfort food tonight, and nothing quite says that like hamburger helper. Alas, when you eat neither meat nor dairy you must make it from random stuff laying in your pantry. Here’s how I made mine: I cooked some chopped onion in olive oil with seasoned salt, thyme, oregano, smoked paprika, black pepper, chili powder, and garlic powder until the onions were translucent. Then I added one Beyond Burger patty and chopped it up with the spatula. I let that cook until the burger had some color, and then I added in about 1/3 cup tomato sauce, a teaspoon or so of veggie bouillon, 1/2 cup or so soy milk, some nutritional yeast (probably 1/4 cup ), and about 1/3 box pasta. Then I added enough water to cover the pasta and let that cook until the pasta was done, about 15 minutes, adding water as needed, and adjusting the spices (I added some more nooch, chili, and paprika ). So I gotta be honest- I don’t follow exact recipes, and a lot of the time I’m kinda just wingin’ when it comes to cooking. I also don’t celebrate Valentine’s Day. But..... I figured I should make something special, so this was the very first time I made pork ribs, and first time making my own bbq sauce. These fell off the bone, and definitely got “lost in the sauce” in a good way 🥰 Served with broccoli rabe, and mashed taters with Earth Balance butter, fresh garlic and olive oil. The bbq sauce: ketchup, molasses, apple cider vin, Korean chili powder, Sriracha, Megalodon hot sauce by @thespicyshark , garlic salt, pink Himalayan salt and black pepper. Went pretty mild on the chili powder and hot sauces- really wasn’t spicy at all. I didn’t have garlic powder, so I went sparing on the garlic salt and pink salt. Then slow-cooked the ribs on high for 4 hours, covered with a little more than half of the sauce made, saving the rest for optional sauciness later. The rib meat and sauce would definitely be stellar in a pulled-pork style sandwich with spicy pickles and coleslaw 🔥

been loving the gym lately!! also.. i’ve tried to start running on the treadmill more often and i’ve realized that i just need to SLOW DOWN!!! * i used to find so much guilt in jogging at 5-6mph and i would make myself run at about 7mph but would max out at a mile or two. now i’ve learned i can keep a steady pace beginning myself at 5.5 and run like 4 miles! * this might not be impressive to some but for me it’s a huge improvement in mindset and physical endurance. slowly overtime maybe i can run longer faster, but progress and ability doesn’t come over night!!!! 😤💝

Dinner tonight is one of our FAVES... White Bean Chicken Chili 😋 We love this one because not only is it tasty, but it's also super easy because you just throw everything in the crock pot or instant pot 👌 RECIPE: ✅4 cups of Chicken broth or Bone broth. 👉 I made bone broth for mine because it makes the chili so much more flavorable. ✅2lbs of cooked + shredded chicken. 👉 I used the meat that came off the bones I used to make my bone broth. Once again, so much more flavorable! ✅ 2 diced Jalapenos unseeded (or seeded if you don't like the heat ) ✅ 1 big Onion diced ✅ 2 cans of Great Northen Beans drained ✅ Two drops of Cilantro + Cumin Vitality eo ✅ Salt + White Pepper to taste 👉 If you like it REALLY SPICY, add a dash of red pepper flakes + cayenne 🌶 👉 If you're team #instantpot , cook for 30 minutes. If you're team #crockpot , set on low for 6-7 hours. We served ours up with @krusteaz gf cornbread and now it's time for our bellies to be full + warm ❤ What's a recipe you love? Jam donut babka in the making. I love baking with yeast - you need a teeny little patience and the results are well worth it! The recipe is below or you can find a more detailed recipe on my blog (just google 'jam donut babka' and it's the first one that comes up 😊 ) xo . JAM DONUT BABKA Quick Jam 1 1/4 cup raspberries 1/2 cup organic cane sugar 3 tbsp corn flour/starch Squeeze of lemon . Babka 2 1/2 cups plain flour, plus more for dusting 3/4 cup warm plant-based milk 3/4 cup melted vegan butter 1/2 cup organic cane sugar 1 tablespoon fast-acting yeast 1 tablespoon ground cinnamon 1 teaspoon nutmeg Pinch of salt . Glaze 1 cup organic powdered sugar, to taste 2 tablespoons water . 1. Add all the jam ingredients to a saucepan with a dash of water and bring to a boil for 5 minutes. Reduce to a simmer for until the raspberries have broken down. Remove from the heat and puree with a stick blender. Set aside to cool. 2. Mix all the babka ingredients until they come together. Knead for 5 minutes or until the dough is soft and stretchy. Leave the dough in a bowl, cover with a tea towel and leave it in a warm place for at least 1 hour or until the dough doubles in size. 2. Dust a clean surface with flour. Scoop out the dough and use a rolling pin to flatten it into a rectangule. Spread the cooled jam onto the rectangle, 2 cm/1 inch away from the edge. 3. Starting from the long side of the pastry, roll the pastry into a tube. Use a sharp knife to cut the tube lengthways. Carefully twirl the two halves together. Cut in half for two baking tins. 4. Lift the twirled dough into two lined baking tins (I used two 10x20cm/4x8inch loaf tins ). Place a tea towel over the tins and set aside to rise. 5. When ready, preheat the oven to 170°C/340°F. 6. Bake the babkas in the oven for around 40 minutes or until the outside is golden brown and a skewer can be inserted into the middle and there is no wet dough on it. Remove from the oven and let them cool in their tins. 7. To make the glaze: Combine the sugar and water in a small bowl until smooth. When the babkas are cool, drizzle with the glaze.
Beetroot brownies with a chocolate avocado frosting!!! I say we should indulge in chocolate everrryyydayyyy, not just on Valentine's Day 😊. If you don't, I'll do it for you 😉. BEET BROWNIES WITH A CHOC AVO FROSTING Brownie Dry ingredients 1 1/4 cup plain or all-purpose flour 1 cup coconut sugar, or to taste 1/4 cup cocoa or raw cacao powder 1 tbsp ground chia or flax seeds 1/4 tsp baking powder 1/4 tsp baking soda . Brownie Wet ingredients ~1 cup beetroot puree 3/4 cup melted vegan chocolate 1/4 cup light-tasting vegetable oil 3 tbsp plant-based milk . Chocolate Avocado frosting 1 medium-size avocado, skin and seed removed 1/4 cup cocoa or raw cacao powder 4 medjool dates, pitted 1-4 tbsp maple syrup, to taste . 1. Preheat the oven to 180°C (350°F ). Line a 20cm (8-inch ) square baking pan with baking paper. 2. Add all the dry ingredients to a medium-size bowl and mix until there are no lumps. Add all the wet ingredients to the bowl and mix until combined. Pour the batter into your baking pan and smooth the top. 3. Bake the brownies in the oven for 15-20 minutes (shorter if you like them fudgy, longer if you like them more crispy ). The brownies are ready when the surface is dry. They will set more over time. Allow the brownies to cool in the baking pan. 4. To make the frosting: Add all ingredients to a food processor and puree until it is as smooth as possible. 5. When the brownies are cool, spread the surface with the avocado frosting. 6. The brownies can be stored in an airtight container in the fridge for 5 days or in the freezer for up to 1 month.
Vegan nectarine tart! This Summery dessert has a classic shortcrust base, silky cream-like filling sweetened and topped with nectarines! It's supppper easy to make. Don't be intimidated by the nectarine decorations - I was experimenting to see how many ways I could cut nectarines 🙃. VEGAN NECTARINE TART Base 1 1/4 cup plain flour, plus extra for rolling 1/3 cup light-tasting vegetable oil rapeseed 2 tbsp water, cold 1-2 tbsp any light-coloured liquid sweetener . Filling 1 1/2 cups raw cashews, soaked in water for at least 4 hours then drained 1/2 cup canned coconut cream 2-4 tbsp any light-coloured liquid sweetener, to taste Dash of vanilla extract 1/4 cup cacao butter or coconut oil, melted 3 white or yellow nectarines, destoned . 1. The day before: Soak the raw cashews (for the filling ) in enough water to cover and set aside the in fridge. 2. Preheat the oven to 180°C (355°F ). Line the base of a 25cm (10-inch ) tart pan. 3. To make the crust: Add all the ingredients to a bowl or food processor and mix until evenly combined and it forms a dough. The dough should be soft but pliable and can be pinched between two fingers without breaking. 4.vDust a clean surface with flour. Use a rolling pin to roll out the pastry to about 1/2 cm (1/4 inch ) thick. Carefully use a rolling pin to transfer the dough to the tin. Press the dough against the bottom and sides of the tin to form a crust. 5. Bake the crust for 15 minutes or until the surface is evenly golden brown. Set aside to cool. 6. To make the filling: Drain the cashews and add them to a high-powered blender with the coconut cream, sweetener, vanilla and 1 yellow nectarine (without the stone ). Blend until it's as smooth as possible. 7. Pour the mixture into the tart tin and smooth the top. Place the tart in an airtight container and set in the fridge for 4 hours. 8. Decorate the tart with the remaining nectarines or as desired and enjoy. Store leftovers in an airtight container for up to 3 days. . p.s. if you cannot have nuts, use sunflower seeds instead and add a dollop of yoghurt to balance out its earthiness!

Berry ice cream cake, much needed for the 42°C/108°F degree this weekend in Canberra ☀️. I've been experimenting with home made ice cream recipes trying to make versions of popular treats and a nut/coconut free ice cream🍨. I can't wait to show you these recipes! If you don't have an ice cream maker, this one hits the spot: . BERRY ICE CREAM CAKE Ice Cream Cake 1/2 cup raspberries, fresh or frozen 1/2 cup blueberries, fresh or frozen 1 lemon, zest and juice (optional ) 1 L vegan vanilla ice cream, softened 1/2 cup raspberry jam . To decorate 1/2 cup raspberries and blueberries, fresh . 1. Line a 22 cm (8.6 inch ) long loaf tin with baking paper so the paper hangs over the sides. 2. Add the raspberries and half the lemon zest and juice to a food processor. Process until as smooth as possible. Add 400g of the softened vanilla ice cream to the food processor and pulse until combined. 3. Spoon the raspberry ice cream into the loaf tin. Use a spoon or spatula to smooth the surface. Set aside the tin in the freezer for 1 hour or until set. 4. Scoop half the raspberry jam onto the raspberry ice cream and flatten with a spatula. Return the tin to the freezer for 30 minutes or until set. 5. Scoop 200g of the softened vanilla ice cream into the loaf tin and flatten with a spatula. Return to the freezer for 1 hour or until set. 6. Scoop the remaining raspberry jam onto the vanilla ice cream and flatten with a spatula. Return to the freezer for 30 minutes or until set. 7. Add the blueberries and the remaining lemon zest and juice to a food processor and process until as smooth as possible. Add the remaining (400g ) of the softened vanilla ice cream to the food processor and pulse until combined. 8. Spoon the blueberry ice cream into the loaf tin and flatten with a spatula. Freeze for 2 hours or until set. 9. To serve: Remove the ice cream from the tin by pulling on the baking paper. If it doesn't pop out, carefully run the tin under warm water then remove. Use a sharp knife to cut portions out of the cake. Top the cake with fresh berries and serve immediately.
Lamington tart, a fun and unique taste explosion 😉. It's got a crunchy coconut shortcrust base, layer of chocolate ganache, layer of coconut bounty and jelly studded with fresh berries. Each component is *easy* to make - it just takes a little time! Non-Aussies - have you had a lamington before? Here's the recipe or find a more detailed recipe on my blog (link in profile ) xo . VEGAN LAMINGTON TART Crust 1 1/2 cups plain or all-purpose flour, plus extra for dusting 1/3 cup + 1 tbsp coconut oil, chilled 2 tbsp organic cane sugar 2 tbsp water, chilled . Chocolate Ganache 1 1/2 cups chopped chocolate 2/3 cup canned coconut cream . Coconut layer 1 1/4 cups dessicated coconut 1/2 cup rice malt syrup 1/3 cup canned coconut cream . Raspberry Jelly layer 1/2 cup fresh raspberries 1 cup fresh or frozen raspberries 1/3 cup water 2 tsp agar powder . 1. Preheat the oven to 180°C. Grease a deep 20 cm loose bottom tart pan. 2. To make the crust: Add all the ingredients to food processor and mix until evenly combined and it forms a dough. 3. Dust a clean surface with flour. Roll the pastry onto the surface and carefully use a rolling pin to transfer the dough to the tin. Press the dough against the bottom and sides to form a crust. 4. Bake the crust for 15 minutes or until the surface is evenly golden brown. 5. To make the chocolate ganache layer: Add all the ingredients to a small saucepan over low heat. Melt until the mixture is very smooth then pour it into the tart tin. Set the tin in the freezer for 1 hour or until set. 6. To make the coconut layer: Add all the ingredients to a bowl and mix until combined. When the chocolate layer is firm enough, add the coconut mixture to the tart. Firmly press the mixture and set aside the tin in the freezer for 1 hour. 7. To make the jelly layer: Slice the 1/2 cup of fresh raspberries in half. Add the remaining raspberries and water to blender and blend. Use a sieve to remove the seeds from the raspberry liquid. Add the raspberry water, sweetener and agar to a small saucepan and bring to a boil. Pour the liquid into the tart and quickly arrange the berries on top. Set aside in the fridge for 3 hours or until the whole tart is set.
I'm not easily hypnotised except from layers of chocolate and vanilla cake in a gorgeous bundt tin! I made this recipe for @williamssonomaaus ' 2020 calendar, which also includes recipes from some of the best bakers in this country. I also served the cake at a 5yo non-vegan party and it was a winner 😊😊. Below is the shortened recipe or you can find the detailed recipe on my blog - just google 'vegan zebra bundt' and it's on the first page. I got all my ingredients from mu fav zero waste shop @thesourcebulkfoods / @thesourcedickson . . VEGAN ZEBRA BUNDT CAKE Cake 3 cups self-raising flour 2 cups organic cane sugar 2 tsp baking powder Pinch of any good-quality salt 2 1/2 cups plant-based milk 3/4 cup light-tasting vegetable oil 2 tbs apple cider vinegar 1/4 cup cocoa or raw cacao powder + 2 tbs plant-based milk 1 tbsp vanilla extract . 1. Preheat the oven to 180°C (350°F ). Brush a bundt tin with oil then lightly dust it with flour or cocoa powder. 2. Add the flour, sugar, baking powder and salt to a large bowl. Mix until combined. Add the milk, oil and apple cider vinegar and mix until combined. 3. Pour half of the mixture (around 835g ) into another bowl. Add the cocoa powder and milk to one bowl and the vanilla extract to the other bowl. Mix each bowls until combined. 4. Use 2 spoons of the same size for this step. Spoon a little of one batter into the bundt tin. Spoon an equal amount of the other batter on top. Keep alternating until there is no more cake batter. 5. Bake the cake in the oven for 1 hour or until a skewer can be inserted into the cake and it comes out clean. Allow the cake to cool in the bundt tin for 10 minutes then turn it upside down on and leave it on the wire rack for another 10 minutes. Gently tap the tin on the wire rack to allow it to come out. 6. The cake can be stored in an airtight container at room temperature for 1 day, in the fridge for 5 days or in the freezer for up to 1 month.
